Vegan and delicious!
We all have cravings! My craving is always something chocolatey and although I like some dark bitter chocolatey, sometimes it just does not do the trick! I promise you that once you try this recipe, you will be pleasantly surprised!
This cake will feel like your cheat-meal but will eliminate any cheat-meal regrets! It is delicious, easy to make and healthy! Bonus? VEGAN!
Serves = 10 - 12 servings

Ingredients
Base
12 Medjool Dates
1 cup Cashew Nuts
½ Cup of Oats
2 tbsp Cup of Unsweetened Desiccated Coconut
1 ½ tbsp Honey
¼ cup Water
Filling
2 medium Sweet Potatoes
3.5 tsp of Organic Cacao Powder
2 tsp Organic Maca Root Powder
1 tsp Coconut oil
3 tbsp Honey
Instructions
Add all the base ingredients into the food processor. Process until you have a stick mixture for the base.
Oil a tin with some coconut oil, so your cake does not stick to its sides.
Move the base mixture into the tin, evening it out into a base. Place tin in the fridge until you are ready to apply the filling on top.
Peel the sweet potatoes and place them on top of the steam until cooked.
Take the potatoes off the steam and place them in a bowl. Using a fork and mash them up.
Add the cacao, maca root powder, coconut oil, honey and mix! (*Note: according to taste, you can add more cacao or honey if needed but give it a try before you do, because the sweet potato really does the trick!)
Now add the filling on top of the base
Decorate with sprinkles of coconut on the edges or form shapes with some extra dates on top! Use your imagination to personalise!
Leave in the fridge for 30 minutes before serving
